| | Sweet apples ( golden delici | | | -us ) | | 2
| | Eggs, separated | | 1/2
| cup | Sugar | | 1/4
| cup | Flour | | 1/4
| tsp | Nutmeg, grated | | 2
| tbsp | Butter | | 2
| tbsp | Calvados or rum | | | Confectioner's sugar and lem | | | -n peel |

Procedures:
| 1 | Core, quarter and pare the apples; shred. | | 2 | Beat egg yolks, sugar, flour, nutmeg and calvados into apples. | | 3 | Beat egg whites stiff, fold into apple mixture. | | 4 | Heat butter in non-stick skillet; add the apple mixture and saute over medium heat until bottom of the omelet is browned ( 2 or 3 minutes ). | | 5 | Turn the omelet and brown other side. | | 6 | Slip omelet onto a warm plate and sprinkle with confectioner"s sugar. |
