Ingredients:
2 Sweet apples ( golden delici
-us )
2 Eggs, separated
1/2 cupSugar
1/4 cupFlour
1/4 tspNutmeg, grated
2 tbspButter
2 tbspCalvados or rum
Confectioner's sugar and lem

Procedures:
1Core, quarter and pare the apples; shred.
2Beat egg yolks, sugar, flour, nutmeg and calvados into apples.
3Beat egg whites stiff, fold into apple mixture.
4Heat butter in non-stick skillet; add the apple mixture and saute over medium heat until bottom of the omelet is browned ( 2 or 3 minutes ).
5Turn the omelet and brown other side.
6Slip omelet onto a warm plate and sprinkle with confectioner"s sugar.
