Ingredients:
1 1/2 cupWhole-grain wheat pastry flo
3/4 cupBran
3 tbspApplesauce
2 tspActive dry yeast
3/4 cupWater, warm
2 tspEgg substitute, dried, mixed
4 tbspWater
1 1/2 cupApple juice
2 medApple, peeled and grated
Procedures:
1Recipe by: mcdougall mix flour and bran.
2Add applesauce and mix well.
3Add yeast to warm water, stir to dissolve.
4Let rest 5 minutes while grating the apple.
5Add the apple juice, grated apple, and yeast mixture to the flour mixture.
6Stir batter well.
7Mix the egg replacer with water, beat until frothy.
8Add to batter.
9Cover batter and let rest for 15 minutes.
10Cook on medium-hot non-stick griddle, about 10 minutes on first side, about 5-8 minutes on other side.
11Helpful hints: ladle the batter on the griddle and flatten cakes, or the center won"t be done.
12Do not turn until bubbles form on top.
13These are much thicker than regular pancakes and take longer to cook
