Ingredients:
APPLE PANCAKES
3 Sweet apples
2 Eggs
2 cupMilk
2 cupBiscuit mix
CIDER SYRUP
2 cupApple cider (or tangy apple
-juice)
1 cupSugar
1/2 tspGrated lemon rind
Procedures:
1For apple pancakes: peel and core the apples and thinly slice.
2Beat the eggs, stir the eggs and milk into the biscuit mix.
3Add the apples.
4Cook on a buttered griddle.
5Serve with cider syrup.
6For cider syrup: add sugar to cider and simmer 10 minutes, add lemon rind and simmer a little longer.
7Serve apple pancakes with melted butter and the syrup.
