Ingredients:
1 1/2 cupUnbleached Flour, Sifted
1/2 cupSugar
2 tspBaking Powder
1/2 tspSalt
1 1/2 tspGround Cinnamon
1/4 cupVegetable Shortening
1 ea Large Egg, Slightly Beaten
1/2 cupMilk
1 cupTart Apples *
1 xNut Crunch Topping
Procedures:
1* apples are to be washed and cored.
2Shred the unpeeled apples for recipe.
3~------------------------------------------------------ ~----------------- sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl.
4Cut in shortening with pastry blender until fine crumbs form.
5Combine egg and milk.
6Add to dry ingredinets all at once, stirring just enough to moisten.
7Stir in apples.
8Spoon batter into paper-lined 2 ?inch muffin-pan cups, filling 2/3rds full.
9Sprinkle with nut crunch topping.?bake in 375 degree oven 25 minutes or until golden brown.
10Serve hot with butter and homemade jelly or jam.?nut crunch topping: mix together ?c brown sugar (packed), ?c chopped pecans and ?t ground cinnamon in small bowl
