Apple cider doughnuts

Ingredients:
1 cupApple cider
1 cupSugar
1/4 cupSolid vegetable shortening
2 largeEggs
1/2 cupButtermilk
3 1/2 cupAll-purpose flour
2 tspBaking powder
1 tspBaking soda
1/2 tspCinnamon
1/2 tspSalt
1/4 tspNutmeg
Vegetable oil or shortening
-for frying
GLAZE
2 cupConfectioners' sugar
1/4 cupApple cider
Procedures:
1Boil apple cider in small saucepan until it is reduced to ?cup, 8 to 10 minutes; cool.
2Beat sugar with shortening until smooth.
3Add eggs and mix well, then add buttermilk and reduced cider.
4Stir together flour, baking powder, baking soda, cinnamon, salt and nutmeg in another bowl.
5Add to liquid ingredients; mix just enough to combine.
6Transfer dough to lightly floured board and pat to ?inch thickness.
7Cut with 2 ? to 3-inch doughnut cutter; reserve doughnut holes and reroll and cut scraps.
8Add enough oil or shortening to fill a deep pan 3 inches; heat to 375°F.
9Fry several doughnuts at a time, turning once or twice, until browned and cooked through, about 4 minutes.
10Remove to paper towels with slotted spoon.
11For glaze, mix confectiners" sugar and cider.
12Dip doughnuts while warm; serve warm.
