Ingredients:
1 each3-4 pound chicken, halved
-with backbone removed
1 eachLemon, halved
MARINADE
6 eachGarlic, cloves, crushed
1 tbspCayenne pepper
1 tbspWhite pepper
2 tbspPaprika
-Salt to taste
Procedures:
1Wash chicken thoroughly.
2Pat dry.
3Rub both sides with half a lemon.
4In a small bowl mix garlic and spices.
5Rub mixture on both sides of chicken.
6Place the chicken halves, skin-side up, in a shallow baking dish.
7Allow the chicken to stand covered in refrigerator for 24 hours.
8Place the chicken halves, skin-side up, 4-5 inches from mesquite coals.
9Cover and grill for 20 minutes, turn and grill at 20 to 30 minutes intervals.
10Total cooking time is about 1 ?hours
