Texas pecan cake *

Ingredients:
GREAT TASTIN BBQ-J. BUTEL
1 lbsUnsalted butter
2 cupGranulated sugar
6 Eggs, well beaten
1 tspLemon extract
4 cupUnbliached flour
1 1/2 tspBaking powder
4 cupPecan halves
2 cupWhite raisins
Procedures:
1Preheat the oven to 300°F.
2Grease and lightly flour a 9 ?in tube pan.
3Shake out any excess flour from the pan.
4With a mixer or by hand, blend the butter and sugar together in a large bowl;beat until the mixture is light and fluffy.
5Gradually add the eggs and lemon extract, and beat well.
6Sift the flour and baking powder together three times; add the nuts and raisins.
7Gradually add the dry ingredients to the creamed mixture and blend well.
8Pour the batter into the tube pan.
9Bake 1 ?to 2 hours, or until a cake tester comes out clean.
10Cool the cake for 15 minutes, then remove it from the pan.
11Serve it dusted with powdered sugar, if desired
