Chestnut, walnut & red wine loaf

Ingredients:
1 ozMargarine
1 Onion, peeled & chopped
1 Celery stalk, finely chopped
4 Garlic cloves, crushed
12 ozRoughly mashed fresh
-- chestnuts
12 ozCashew nuts, grated
4 ozWalnuts, grated
1/2 cupRed wine or stock
3 tbspChopped fresh parsley
1 tbspBrandy or lemon juice
1/2 tspHungarian paprika
1/2 tspThyme
1/2 tspBasil
Salt & pepper
GARNISH
Tomato slices
Lemon slices
Parsley sprigs
Procedures:
1Set oven to 375°F, 190c gas Grease & line a 2lb loaf pan with a long strip of waxed paper.
2Fry onion & celery in margarine for 7 minutes then add the garlic & coo a further 3 minutes.
3Remove from heat & add remaining ingredients.
4Season well with salt & pepper.
5Turn mixture into waxed paper lined loaf pan.
6Cover with foil & bake for 1 hour.
7Remove foil & cook another 15 minutes until the loaf is firm in the centre.
8Remove loaf from the oven & allow to stand 3 to 4 minutes.
9Loosen the edges with a knife & turn loaf out onto a serving platter.
10Garnish with tomato, lemon & parsley.
