Cheese rice timbales

Ingredients:
1/4 cupFinley chopped green pepper
1 tbspFinely chopped onion
2 tbspCooking oil
1 tbspFlour
3/4 cupMilk
1/2 tspSalt
1/2 tspDry mustard
1/4 lbsCheese, grated
2 Eggs, beaten
1 cupCooked rice
Procedures:
1Cook green pepper and onion in oil until tender.
2Blend in flour; add milk and cook, stirring constantly, until thickened.
3Add the salt and mustard.
4Remove from heat.
5Add cheese and stir until it is melted.
6If necessary, place pan over very low heat to melt cheese.
7Stir sauce into eggs; add rice.
8Turn into greased custard cups.
9Bake at 350 °F for 35 minutes or until firm.
10Unmold and serve plain or with tomato sauce
