Ingredients:
| 1/4
| cup | Finley chopped green pepper | | 1
| tbsp | Finely chopped onion | | 2
| tbsp | Cooking oil | | 1
| tbsp | Flour | | 3/4
| cup | Milk | | 1/2
| tsp | Salt | | 1/2
| tsp | Dry mustard | | 1/4
| lbs | Cheese, grated | | 2
| | Eggs, beaten | | 1
| cup | Cooked rice |

Procedures:
| 1 | Cook green pepper and onion in oil until tender. | | 2 | Blend in flour; add milk and cook, stirring constantly, until thickened. | | 3 | Add the salt and mustard. | | 4 | Remove from heat. | | 5 | Add cheese and stir until it is melted. | | 6 | If necessary, place pan over very low heat to melt cheese. | | 7 | Stir sauce into eggs; add rice. | | 8 | Turn into greased custard cups. | | 9 | Bake at 350 °F for 35 minutes or until firm. | | 10 | Unmold and serve plain or with tomato sauce |
