11 cup couscous 1 cup sliced carrots 1.5 cup water 1 cup sliced celery 1.5 lb tofu, cubed 1 can chickpeas 1 can tomato sauce ?cup raisins 1 onion, chopped 2 tsp curry powder 1 cup sliced mushrooms ?tsp cayenne ?cup chopped walnut 1 tsp paprika 1 tsp salt vegetable mixture: in large pan, brown tofu, onion, carrots, celery, mushrooms, nuts in 3 t. oil.
2Add remaining ingredients, bring to boil, cover andsimmer for 40 minutes.
3Couscous: boil 1.5 cup water with 2 t. oil.
4Pour over couscous, stir, cover, let stand for 5 min. or until water is absorbed.
5Serve vegetables over steaming couscous.
