Ingredients:
6 smallPotatoes, red, scrubbed
1/2 lbsShrimp, fresh cooked
1 can14 ½oz.cajun stewed
Tomatoes
1/3 cupParsley, fresh minced
Pepper, black, ground
To taste
14 fl ozWater + chicken boullion
3/4 lbsRed snapper fillets
Cut into 1" cubes
1/8 tspCayenne pepper (OPTIONAL)
1/2 cupClam juice
Procedures:
11.do not peel the potatoes, slice in halves and each half into ?slices.
2Puree the stewed tomatoes in a food processor.
32.in a large saucepan, combine the potatoes with the pureed tomatoes,clam juice, oregono and cayenne if a a spicier stew is desired.
4Bring just to a boil, reduce the heat, cover and simmer 20 - 25 minutes,or until the potatoes are tender.
53.add the snapper, simmer uncovered 5 minutes.
6Stir in the shrimp and simmer 3 minutes to heat through.
7Add the parsley and pepper to taste.
8Serve.
