Ingredients:

| | Wild hog ( hindquarters) | | 1
| cup | Onions, chopped fine | | 1
| cup | Green peppers chopped fine | | 1
| cup | Celery, chopped fine | | 1
| tbsp | Garlic flakes | | 1
| tsp | Dry mustard | | 1
| tsp | Thyme | | 2
| tsp | Sweet paprika | | 2
| tsp | Black pepper | | 1
| tsp | White pepper | | 1
| tsp | Red pepper | | 2
| tsp | Salt |

Procedures:
| 1 | In a bowl combine seasonings; set aside. | | 2 | Rub the hog quarters thoroughly with ?seasoning mix. | | 3 | Place the hog in a large roasting pan with a rack. | | 4 | Braise under a very hot broiler until brown. | | 5 | Remove from heat & set aside; retain drippings. | | 6 | In a large saucepan add the drippings. | | 7 | Combine the remaining ingredients and add to the drippings saute at 450 °F for 5 minutes. | | 8 | Remove from heat and set aside. | | 9 | Make numerous small slits in the hindquarters and place in baking pan. | | 10 | Pour sauce over the leg and bake at 350 degrees, turning twice and basting frequently,until leg reaches your desired doneness |
