Ingredients:
| 3
| large | Shiitake mushrooms | | 2
| each | Cakes medium tofu | | 1
| lbs | Cabbage, sliced | | 3
| tbsp | Oil | | 1/2
| tsp | Salt | | 2
| tsp | Soy sauce | | 1
| tsp | Mirin sauce |

Procedures:
| 1 | Soak mushrooms in ?c hot water for ?hour. | | 2 | Put tofu onto a paper towel & leave to drain for 30 minutes. | | 3 | Remove mushrooms from water, reserve liquid. | | 4 | Cut off & discard stems. | | 5 | Slice caps into ? wide strips. | | 6 | Heat oil in an 8" skillet. | | 7 | When hot, put in cabbage & mushrooms. | | 8 | Stir & fry for 1 minute, till cabbage wilts. | | 9 | Reduce heat to medium. | | 10 | Crumble tofu & it to the skillet. | | 11 | Add salt, soy sauce & mirin. | | 12 | Stir & fry for another 5 minutes. | | 13 | Madhur jaffrey "world of the east vegetarian cookbook |
