Ingredients:

| tbsp | Oil | | 2
| lbs | Chili meat * | | 1
| large | Onion, chopped med. | | 2
| cl | Garlic, minced | | 2
| tsp | Cumin | | 2
| tbsp | Chili powder | | 3
| cup | Canned tomatoes, w/joice | | 12
| oz | Beer ** | | | Salt/pepper to taste |

Procedures:
| 1 | Heat the oil (your choice of low-smoke type) in a heavy pot over medium-high heat. | | 2 | Add meat, onion and garlic, cook until browned. | | 3 | Add cumin, chili powder, salt and pepper and stir to blend. | | 4 | Coarsely chop tomatoes and add to meat with the juice. | | 5 | Stir in beer. | | 6 | Simmer over low heat, uncovered for 1-2 hours, adding more beer or water as necessary. | | 7 | * if chili meat not available, use stew or soup meat. | | 8 | ** some prefer flat beer for recipe instead of fresh. | | 9 | Enjoy! - jeff duk |
