Black beans with fresh plums and bell peppers

Ingredients:
4 medPlums, purple
1 1/2 tbspButter, unsalted OR
1 1/2 tbspCorn oil
1 largeOnion, chopped
1 largeBell pepper, red, seeded
--and chopped
1 largeBell pepper, yellow, seeded
--and chopped
2 Garlic cloves, crushed and
--minced
2 Cloves, whole
2 tspCumin, ground
1/2 cupCilantro, fresh, minced
2 tspLemon juice, fresh
1 tspHoney, light (or substitute)
2 cupBeans, black, cooked, drained
Procedures:
1Fill a deep saucepan with water and bring to a boil.
2Add plums and boil for 30 seconds to loosen skin.
3Remove with a slotted spoon and set aside to cool.
4Melt butter or heat oil in a large skillet.
5Add onion, red and yellow gell peppers, garlic, cloves, cumin and cilantro.
6Saute gently, stirring often, until onion softens, about 5 to 10 minutes.
7Meanwhile, peel plums, remove pits and chop pulp.
8Add pulp, lemon juice and honey to onion mixture.
9Add beans, cover and continue cooking over low heat until peppers are soft, about 30 minutes, stirring often to prevent stickikng.
10Makes 3 to 4 servings.
