| | (1-lb.) ham shank | | 1/2
| tsp | Dried leaf thyme | | 1/2

| tsp | -cayenne pepper, if desired | | | Water | | 1
| cup | Chopped green pepper | | 1/3
| cup | Dark rum, if desired | | | -- if desired | | | Water for cooking | | 1
| tbsp | Butter or margarine | | 1
| | Beef bouillon cube | | | -- cut in 3 or 4 pieces | | 1/2
| tsp | Dried leaf oregano | | 1
| | Dried whole red pepper, OR | | 3
| cup | Uncooked rice | | | Salt | | 2
| | Bay leaves | | 1
| cup | Dairy sour cream | | 1
| | Smoked sausage link |

Procedures:
| 1 | Sort and soak beans. | | 2 | Drain beans; discard soak water. | | 3 | In a 4-quart pot, saute onion in butter or margarine until tender but not browned. | | 4 | Add soaked beans, 4 cups water, bouillon cube, ham shank pieces, bay leaves, thyme, oregano, salt and red pepper or cayenne pepper, if desired. | | 5 | Bring to a boil; reduce heat. | | 6 | Cover and simmer until beans are tender, 1 to 1-?hours. | | 7 | Cook rice with water and salt according to package directions. | | 8 | Remove 1 cup beans from stew. | | 9 | Mash in a small bowl with a potato masher or fork. | | 10 | Add mashed beans to stew; stir to thicken. | | 11 | Remove ham shank pieces and red pepper, if used. | | 12 | Discard red pepper. | | 13 | Cut meat from bones and discard bones. | | 14 | Dice meat. | | 15 | Add diced meat, green pepper and rum, if desired, to beans. | | 16 | Cover and simmer 15 minutes. | | 17 | Serve beans over rice. | | 18 | Top each serving with a dollop of sour cream, if desired. | | 19 | Makes 4 to 6 servings. |
