Ingredients:
1 lbsDried black beans
1 cupChopped onion
4 cupWater
1 (1-lb.) ham shank
1/2 tspDried leaf thyme
1/2 tspSalt
1/8 tsp-cayenne pepper, if desired
Water
1 cupChopped green pepper
1/3 cupDark rum, if desired
-- if desired
Water for cooking
1 tbspButter or margarine
1 Beef bouillon cube
-- cut in 3 or 4 pieces
1/2 tspDried leaf oregano
1 Dried whole red pepper, OR
3 cupUncooked rice
Salt
2 Bay leaves
1 cupDairy sour cream
1 Smoked sausage link
Procedures:
1Sort and soak beans.
2Drain beans; discard soak water.
3In a 4-quart pot, saute onion in butter or margarine until tender but not browned.
4Add soaked beans, 4 cups water, bouillon cube, ham shank pieces, bay leaves, thyme, oregano, salt and red pepper or cayenne pepper, if desired.
5Bring to a boil; reduce heat.
6Cover and simmer until beans are tender, 1 to 1-?hours.
7Cook rice with water and salt according to package directions.
8Remove 1 cup beans from stew.
9Mash in a small bowl with a potato masher or fork.
10Add mashed beans to stew; stir to thicken.
11Remove ham shank pieces and red pepper, if used.
12Discard red pepper.
13Cut meat from bones and discard bones.
14Dice meat.
15Add diced meat, green pepper and rum, if desired, to beans.
16Cover and simmer 15 minutes.
17Serve beans over rice.
18Top each serving with a dollop of sour cream, if desired.
19Makes 4 to 6 servings.
