Ingredients:
5 tbspOlive oil
1 medOnion, chopped
1 medGreen bell pepper, diced
2 eachGarlic cloves, chopped
2 1/2 cupCooked black beans
2 cupRice
4 1/2 cupWater
2 tspSalt
1 eachBay leaf
2 tbspOlive oil
1/4 tspCumin
Black pepper to taste
Procedures:
1In a large pot, heat oil till fragrant.
2Add onion, bell pepper & garlic & cook till tender, about 8 minutes.
3Add the remaining ingredients & cook over medium-high heat until all the water has been absorbed.
4It should take 15 minutes or less.
5Stir with a fork, cover & cook over low heat until the rice is tender.
6Discard bay leaf & serve hot.
