16 oz(1) pkg dried black beans
1 medSize green pepper, chopped
1/4 cupOnion, divided chopped
2 1/2 cupQts water, divided
2 clGarlic, minced
1/2 tspDried whole oregano
1/4 tspGround cumin
3 tbspVinegar
1 tspSalt
3 cupRice, cooked hot
-cooked without salt/fat
Procedures:
1Sort and wash beans.
2Combine beans, green pepper, and 2 tb onion in a large dutch oven.
3Cover with 6 cups of water, and soak overnight.
4Add remaining 4 cups water to dutch oven; cover and bring to a boil.
5Reduce heat, and simmer 2 ?hrs or until beans are tender.
6Combine remaining 2 tb onion, garlic, oregano, and cumin in a small bowl; mash mixture, using a fork.
7Stir in vinegar.
8Add vinegar mixture and salt to beans.
9Simmer, uncovered, an additional 20 minutes.
10Serve over hot cooked rice
