Black bean & root vegetable stew

Ingredients:
1/2 cupBlack beans, soaked
1/2 medTurnip, cut into rounds &
-- each round halved
1/4 tspNutmeg
1 medOnion, sliced
2 largeCarrots, quartered
1 tspDill weed
3 largePotatoes, quartered
2 tbspParsley
1 medParsnip, quartered
1/2 tspOregano
1/2 cupGreen peas
1/2 cupMushrooms, halved
Salt & pepper
Water or stock to cover
Procedures:
1In the bottom of a large casserole dish, arrange the turnip slices & sprinkle with the nutmeg.
2Layer the rest of the vegetables in order, sprinkling in the herbs after each layer.
3Top with the soaked beans.
4Pour over enough water or stock to cover & season with salt & pepper.
5Cover with a good tight-fitting lid & place in an oven pre-heated to 300°F.
6Cook for 3 hours.
7If you desire, add dumplings & cook for a further 30 minutes.
8Note: i made this recipe to emphaise the taste of the root vegetables.
9Add whatever vegetables & herbs you wish.
10I used black beans to add some protein.
11If exchanging legumes, be sure to use ones that can stand a lot of cooking, kidney beans or chick peas, for example
