Black bean polenta/ nancy

Ingredients:
2 cupDried black beans
8 cupWater
3 tspSalt
2 cupPolenta(coarse corn meal)
3 cupSliced Green Onion(2 bunch)
4 cupGarlic jack cheese grated
1 pintFresh salsa
1 canChopped green chilies(7 oz)
Procedures:
1Cook beans..can be done day before, or quick soak and cook same day..refrigerate.
2In a large pot bring 8 cups water to a boil, add salt; add cornmeal slowly, stirring constantly.
3Cook 20 min or until thick enough to leave sides of pan.
4Mix in green onion and half of cheese.
5Pour half of this mixture into an 9"x13" pan.
6Spread salsa over mixture, then black beans( drained), then chilies, then remaining cheese.
7Pour rest of polenta on top.
8Bake at 350 deg for 20 min..let cool before cutting into servings.
9Reheat if necessary before serving.
10This is very good and filling..makes 8 very generous servings
