Ingredients:
1 cup-Water
1/2 cupQuinoa, rinsed
2 cupBlack bean flakes
1 1/2 cup-Boiling water
2 tspChili powder
1 tspGround cumin
1/2 cupFresh cilantro, chopped
2 Green onions, chopped
1/2 cupRed bell pepper, chopped
1/2 cupPlain bread crumbs
3/4 tspSalt
2 tspVegetable oil
OPTIONAL GARNISHES
2 cupLettuce, shredded
1 cupGrated lo-fat cheddar cheese
-OR cheddar-style soy cheese
1/2 cupNonfat sour cream
1 cupBottled salsa
Avocado, diced
Ripe olives, sliced
Green onions, chopped
Procedures:
1Bring 1 cup water to a boil in a small saucepan.
2Add quinoa, cover and simmer 15 minutes.
3Place black bean flakes in a medium-sized bowl.
4Stir in boiling water.
5Cover and let stand 5 minutes.
6Combine ?cup cooked quinoa with black beans, chili powder, cumin, cilantro, green onions, red bell pepper, bread crumbs and salt.
7Mix well.
8Lightly flour hands and divide mixture into six equal balls.
9Flatten each ball into a ?inch-thick cake.
10Heat oil in a nonstick skillet.
11Cook each bean cake about 2 minutes each side.
12Serve topped with lettuce, cheese, nonfat sour cream, salsa and other garnishes, as desired.
