Biryani rice recipe

Ingredients:
3/4 cupRice Basmati
- or long-grain rice
1 1/2 cupLess 2 tbsp water
1 tspOil
Salt to taste
1/2 lbsChicken
- cut into small pieces
3 tbspOil
1 largeOnion chopped
1/2 tspGinger paste
1/2 tspGarlic paste
1 tspGround cumin
1 tspGround coriander
1/2 tspTurmeric powder
1 Bay leaf
2 Cloves
2 Cardamoms
Pn Cinnamon
1 smallTomato quartered
1 smallPotato
- peeled and quartered
3 tbspPlain yogurt
1/4 tspSaffron
Procedures:
1Wash rice and put in a small saucepan with all above ingredients.
2Bring it to a boil on high heat, then cover and simmer gently until all the water is absorbed.
3The grains should be tender but firm.
4Set aside uncovered.
5Heat oil in a large saucepan (medium heat), add onions and fry till golden around the edges, add garlic and ginger.
6All at once add all the spices and fry one minute longer.
7Add all other ingredients except saffron.
8Add salt to taste.
9Cover and cook on low heat till chicken is tender, stirring occasionally (about ?hour).
10There should be very little liquid remaining in the pan.
11(during cooking a little water may be added if necessary to avoid sticking).
12Add half the prepared rice, spreading it evenly over the mixture, drizzle one tbsp of oil over it and add the saffron mixed into two tsp of milk.
13Cover with remaining rice, cover and cook on very low heat for ten minutes.
14Serve accompanied with whipped, lightly sweetened yogurt.
15The chicken could be substituted with ?pound of mixed vegetables
