Bhindi subji (okra & tomatoes)

Ingredients:
2 lbsOkra, fresh or thawed
4 tbspVegetable oil
1 Onion, medium and minced
4 Garlic cloves, chopped
1/2 tspCumin seed
2 Green chilies, chopped
1/4 cupCoriander leaves-fresh/chopd
1/4 tspTurmeric
16 ozStewed tomatoes (1 can=8 oz)
2 tbspVinegar
1/2 cupWater
1 tbspBlack pepper, ground
1 pinchSalt
Procedures:
1Wipe okra gently with moist kitchen towel.
2Cut each into 4 pieces and set aside.
3Heat vegetable oil in a skillet.
4Add onions, garlic, cumin seed, chilies (optional), and coriander leaves.
5Saute 4 to 5 mins.
6Add turmeric.
7Stir once or twice.
8Add tomatoes, vinegar and ?cup water.
9Bring to a boil.
10Lower heat and simmer 15 mins.
11Add okra, black pepper and salt.
12Cover and cook until okra is tender, about 20 mins
