Garlicky stuffed steak - menu #1

Ingredients:
1 1/4 cupFresh bread crumbs
-(about 4 slices) divided
6 tbspFresh parsley, mince & divide
1/2 tspSalt
1/2 tspPepper
2 tbsp+ 1 tsp. butter, divided
1 smallRed or green bell pepper
-diced
3 Garlic cloves, minced
2 1/2 lbsBottom round steak
-2 inches thick
Procedures:
1Preheat oven to 400 °F.
2Combine 1 cup bread crumbs, 4 tbsp. parsley, ?tsp. each salt and pepper.
3In small skillet melt 2 tbsp. butter over low heat.
4Add red pepper and garlic.
5Cook, stirring occasionally, until pepper softens, about 8 minutes.
6Remove from heat; stir in bread crumb mixture.
7Cool to room temperature.
8Place steak on work surface.
9With knife cut pocket in meat by slicing steak almost in half lengthwise.
10Open pocked; spoon in stuffing.
11Tie in several places with kitchen string.
12Melt remaining butter and brush over steak.
13Combine remaining bread crumbs, parsley, salt and pepper.
14Roll steak in bread crumb mixture to coat; olace on rack set in roasting pan.
15Cook 18 to 20 minutes per side for medium-rare.
16Ready to serve in 1 hour 15 minutes
