Beefy tofu enchiladas

Ingredients:
8 8-inch soft flour tortillas
1/2 cupChopped onion
1 lbsGround beef
-- browned and drained
1 canChopped green chilies (4oz)
1 Garlic clove, minced
1 tspDried cilantro
10 1/2 ozFirm tofu, mashed
1/2 tspCumin seed
2 cupDiced tomato, drained
2 cupThick tomato salsa
1 cupShredded cheddar cheese
Procedures:
1Preheat oven to 350 degrees.
2Lightly spray a 9x13 inch baking dish with non-stick spray.
3In bowl, combine all ingredients except tortillas, tomato salsa and cheese.
4Place ?cup of mixture in center of each tortilla and roll.
5Place in baking dish, seam side down.
6Pour salsa over enchiladas.
7Sprinkle with shredded cheese.
8Cover pan with aluminum foil and bake for 25 - 30 minutes.
9Yields 8 servings.
