Ingredients:
2 tbspAll-purpose flour
1 lbsBeef stew meat, cubed
2 tbspVegetable oil
3 cupVegetable juice cocktail
1 canRO*TEL Whole Tomatoes and
-Green Chilies (10 oz)
1/2 cupChopped onion
2 Beef bouillon cubes
2 Garlic cloves, minced
1/2 tbspDried basil
1/2 tbspDried thyme
2 1/4 cupCubed, peeled potatoes
2 cupSliced carrots
1 cupSliced celery
Procedures:
1Place flour in a food storage bag; add meat cubes a few at a time, shake to coat.
2In a large dutch oven, brown meat in hot oil.
3Stir in juice, ro*tel, onion, bouillon, garlic, basil and thyme.
4Heat to a boil; reduce heat.
5Cover and simmer 1 to 1 ?hours.
6Add potatoes, carrots and celery.
7Cover and simmer an additional 45 minutes or until tender
