Londontown terrace crab pie

Ingredients:
2 tbspButter
1/2 cupCelery, chopped
1 1/2 cupShredded cheese
3 ea Eggs
1/2 tbspPepper
1 xPinch red pepper
1 cupSliced onion rings
1 cupCrabmeat
1 ea 9" unbaked pastry shell
1 tbspSalt
2/3 cup"Half and Half"
Procedures:
1Sautee the onion rings and celery in butter until the onion is soft and golden.
2Spoon alternate layers of crab, cheese (your choice - use sharp, cheddar, or swiss), and onion/celery mix into pie shell.
3In bowl, beat together eggs, cream, salt and pepper.
4Pour into pastry shell over other ingredients.
5Bake in hot oven, 400 degrees, until firm, about 30-40 minutes.
6When knife point inserted into center comes out clean, filling is set.
7May be decorated with tomato wedges or cherry tomatoes.
8Cool slightly before cutting.
9Tuna, salmon, shrimp, or flaked fish may be substituted for crabmeat
