Ingredients:
3 eachPads tofu
8 eachTree ears
2 tbspPeanut oil
1 tbspFinely chopped ginger
1 1/2 tbspFinely chopped garlic
3/4 cupChopped scallions
1 tspHot chilies, chopped
1/2 cupCooked fresh peas
1 tspSugar
1 tbspRed wine vinegar
1 tspSesame oil
Procedures:
1Cut tofu into ?inch cubes.
2Soak tree ears in warm water till soft.
3Drain & chop coarsely.
4Heat oil in a wok & when very hot add ginger, garlic & scallions.
5Add tofu, stirring quickly.
6Add tree ears, chilies & peas.
7Stir.
8Add sugar & vinegar & toss.
9Spoon mixture into a serving dish & sprinkle with sesame oil.
10Serve over rice.
