Ingredients:

| tbsp | Butter | | 1/2
| tsp | Salt | | 1
| cup | Sugar | | 3
| | Eggs, separated | | 1 1/2
| cup | Hot milk | | 1
| | 9" pie shell |

Procedures:
| 1 | Cream butter and sugar. | | 2 | Add egg yolks and beat well. | | 3 | Add flour, salt, lemon juice and grated rind. | | 4 | Fold in stiffly beaten egg whites. | | 5 | Pour into unbaked pie shell and bake at 325 °F for 45 minutes |
