Ingredients:
1 tbspShortening
1/4 lbsKosher salami, cubed
1 Sprig thyme
1 Onion, sliced
Salt & Pepper to taste
2 cupTomatoes
1 cupUncooked long grain rice
1 tbspFlour
1/4 cupGreen pepper, minced
1 Bay leaf
1 Sprig parsley, minced
1 Clove garlic, minced
1 lbsKosher smoked sausage.
1 1/4 cupTomato juice
Procedures:
1Melt shortening in heavy saucepan over medium heat.
2Stir in flour, salami, and green pepper.
3Simmer 5 min, stirring constantly.
4Add remaining ingredients except rice.
5Bring to boil.
6Add rice to liquid.
7Cover and simmer for 40 min. until all liquid is absorbed
