Basil brie toast

Ingredients:
2 cupBasil leaves, fresh
1/2 cupPine nuts
3 Garlic, cloves, minced
1/4 tspSalt
1/2 cupOil, olive
1/3 cupCheese, Parmesan, fresh
Grated
8 Bread, white or whole wheat
Cut in half, crusts removed
3/4 lbsCheese, Brie, sliced thin
Thick parts of rind trimmed
Off
Margarine or butter, melted
For brushing on grill rack
1 Tomato, sliced for garnish
1 Basil leaves, fresh for
Garnish
Procedures:
1For pesto sauce, put basil, pine nuts, garlic and salt in a blender or food processor fitted with steel blade.
2Process until pureed.
3With the machine running, pour oil in a slow, steady stream.
4Process until sauce is smooth.
5Spoon sauce into a bowl.
6Add parmesan cheese.
7Mix well.
8Cover and refrigerate.
9Cover bread with slices of brie cheese.
10Spread top of cheese with a thin layer of pesto sauce.
11Prepare grill.
12When coals are hot, place bread on grill rack, brushed with margarine, about 4 to 6 inches from heat source.
13Cover.
14Grill for 1 to 2 minutes.
15Bread will be toasted on bottom and cheese will be soft and runny.
16Place two pieces of toast on each plate.
17Garnish with tomato slices and basil leaves, if desired. serve hot
