Ingredients:
4 xZucchini, medium
1 xOnion, yellow, chopped
1 ea Egg, beaten
1/2 lbsGround beef, lean
2 cupSpaghetti sauce, canned *
2 tbspParsley, fresh, chopped
1 cupRice, long grain cooked
1 xGarlic clove, chopped
2 tbspOlive oil
1/2 cupBread crumbs
3 tbspDill, fresh, chopped
2 tbspParmesan cheese, grated
Procedures:
1* store bought if preferred.
2Preparation: 30 minutes cooking: 45 minutes 350f split zucchini lengthwise, scoop out seeds.
3Saute ground beef, onion, garlic, dill, and parsley in olive oil.
4Remove from heat.
5Add cooked rice, beaten egg, ?c bread crumbs and mix well.
6Fill zucchini with mixture and place in a baking dish.
7Cover with spaghetti sauce, sprinkle cheese and remaining bread crumbs on top.
8Cover and bake at 350°F for approximately 45 minutes, until zucchini is tender but firm.
