Ingredients:
1 cupAll-purpose flour
1/3 cupEnriched Corn Meal
-- (Aunt Jemima or Quaker)
3/4 tspSalt (optional)
1/3 cupVegetable shortening
-OR- margarine
1/4 cupCold water
10 ozFrozen chopped broccoli
-- thawed
13 ozEvaporated milk
1 canTuna (6-?or 7-oz. size)
-- drained, flaked
1/4 cupGrated parmesan cheese
1/2 tspDillweed
Procedures:
1Heat oven to 350°F.
2Combine flour, corn meal and ?teaspoon salt.
3Cut in shortening until mixture resembles coarse crumbs.
4Add water, 1 tablespoon at a time, stirring lightly with fork until mixture forms a ball.
5On lightly floured surface, roll out pastry to form 12-inch circle.
6Fit loosely into 9-inch glass pie plate; trim.
7Turn edges under; flute.
8Place broccoli between layers of paper towels.
9Pat gently to absorb excess water.
10Combine broccoli, remaining ?teaspoon salt and remaining ingredients; mix well.
11Pour mixture into pastry shell.
12Bake 50 to 55 minutes or until knife inserted in center comes out clean.
13Let stand 10 minutes before serving.
14Serve with lemon wedges, if desired.
