Baked stuffed squash

Ingredients:
2 Acorn squash
1 Onion, chopped
1/4 lbsMushrooms, chopped
1 tbspSalt-reduced tamari
1/4 tspSage
1/4 tspThyme
1/4 tspMarjoram
3 cupCooked rice OR
3 cupWhole wheat bread crumbs
Procedures:
1Cut squash in half lengthwise.
2Scoop out seeds and stringy portion.
3Place in a baking dish with ?inch of water in bottom.
4Bake for about 1 hour at 350 degrees.
5While squash is baking, prepare the stuffing mix.
6Cook onions and mushrooms in ?c. water for 5 minutes.
7Add tamari and spices.
8Cook over low heat for 5 more minutes.
9Remove from het.
10Add the rice or the bread crumbs and mix together well.
11When the squash has baked about 1 hour and is almost tender, remove from oven.
12Fill each with stuffing mix.
13Return to oven and bake an additional 15 minutes.
14May be served as is or with gravy.
15To prepare ahead, bake the squash for one hour and remove from oven.
16Let cool.
17Prepare stuffing.
18When ready to prepare dinner, fill with stuffing mix and bake at 350 °F for 30 minutes
