Ingredients:
1 lbsChicken breast, boneless &
-skinned
2 tspVirgin olive oil
6 tbspDry white wine
1/4 cupLemon juice
2 tspLeaf tarragon, dried
2 tspLeaf basil, dried
1/2 tspHot red pepper flakes
Procedures:
1Preheat the oven to 350 degrees.
2Trim any fat from chicken breast and pound lightly between two sheets of waxed paper to flatten.
3Coat with olive oil and place in a baking dish.
4Add wine, lemon juice, herbs and and pepper flakes, turning chicken to coat both sides.
5Cover dish with foil.
6Bake 25 to 30 munutes, until chicken cooked through.
