Ingredients:
2 largeAcorn squash, split length-
Wise and seeded
1 cupChopped pear
1/2 cupRaw cranberries (fresh or
Frozen)
3 tbspUndiluted orange juice
Concentrate
3 tbspHoney or Maple Syrup
1 1/2 tspGround cinnamon
1/2 tspGround allspice
Procedures:
1Preheat oven to 400 degrees.
2Place squash cut side up on foil-lined baking sheet.
3In a large bowl, combine pear, cranerries, orange juice concentrate, honey or syrup, cinnamon and allspice.
4Spoon mixture into squash cavities.
5Use any extra liquid to brush cut edges of squash.
6Bake 45 minutes to 1 hour, or until squash is soft.
7Serve hot.
