Ingredients:
2 ea Eggplants, peeled & cubed
1 cupBread crumbs, seasoned
2 tbspParsley, fresh, chopped
1 ea Clove garlic, minced
1 tbspSalt
1 cupSharp cheese, grated
2 ea Eggs
2 tbspOnion
1 cupCorn oil
1/2 tbspPepper
Procedures:
1In covered saucepan, cook eggplant in a small amount of boiling water until tender, about 4-5 mins.
2Drain & mash.
3Stir in remaining ingredients except oil.
4Shape into patties.
5Fry in hot oil until golden brown, about 5 mins on each side
