Ingredients:
1 3/4 cupBarley
10 cupVegetable broth
2 Onions, chopped in large
-pieces
3 Potatoes, white, chunked
1 largeSweet potato, chunked
1 lbsBrussels sprouts
2 tbspTamari, low sodium
1 tspParsley flakes
2 tspOregano
1 tspDill weed
3 Tomatoes, wedged
Procedures:
1Place barley and water in large pot.
2Bring to a boil.
3Add remaining ingedients, except the tomatoes.
4Reduceheat, cover, and simmer about 50 minutes.
5Add the tomatoes.
6Cook an additional 10 minutes.
7Serve hot.
8Can be prepared in a slow cooker, but don"t add the tomatoes until just before serving
