Ingredients:

| lbs | Pork loin, boned | | 1
| cup | Strong coffee | | 1/2
| cup | Cream | | 1/3
| cup | Port | | 2
| tsp | Sugar | | 1/4
| cup | Water | | 2
| tsp | Cornstarch |

Procedures:
| 1 | Preheat oven to 350°F. | | 2 | Remove rind from pork and trim fat to make a 1 cm layer. | | 3 | Roll and tie the meat. | | 4 | Weight pork and calculate cooking time, allow 25-30 mins. | | 5 | Per 500 gr. | | 6 | Place meat in roasting pan. | | 7 | Roast pork for 30 mins. | | 8 | Combine coffee, ?c. cream, ?c port & sugar, pour over pork. | | 9 | Continue roasting pork for calculated cooking time, basting pork every 15 mins with coffee mixture. | | 10 | This basting gives the outside a beautiful golden glaze & helps to keep the meat moist. | | 11 | Remove pork from oven when cooked. | | 12 | Keep covered in a warm place while making the sauce. | | 13 | Skim fat from the pan juices. | | 14 | Place juices in a small saucepan with water, remaining ?c cream, remaining port and cornstarch. | | 15 | Cook until thickened, strain. | | 16 | Slice pork thinly and place a tablespoon or two of sauce on each serving. | | 17 | Remaining sauce should be available for guests to add more |
