Ingredients:
3 cupHot cooked rice
12 ozMarinated artichoke hearts
-- drained, and
-- coarsely chopped
-- reserving liquid
4 ozSliced fresh mushrooms
1/2 cupSliced green onions
1/2 cupChopped red or yellow pepper
1/4 cupGrated Parmesan cheese
1/8 tspGround white pepper
1 1/2 tbspWhite wine vinegar
Lettuce leaves
Procedures:
1Combine hot rice, artichoke hearts, mushrooms, onions, cheese, and pepper.
2Combine reserved liquid from artichokes and vinegar; shake to combine.
3Drizzle over salad.
4Spoon into individual lettuce-lined salad plates.
