Ingredients:
2 tbspOil
2 lbsChicken thighs & legs
1/2 tspPaprika
1 tbspCilantro, chopped
1/2 cupOnion, diced
1 Clove garlic, crushed
1 1/2 cupWater
1/2 cupWhite wine
3 Tomatoes, diced
1 Bouillon cube
1 Bay leaf
1/2 tspOregano
1 tspMixed vegetable seasoning
1/2 tspBasil
1 cupCelery
1/2 cupAlmonds
3/4 cupShort grain brown rice
3/4 cupWild rice
2 cupPeas
Procedures:
1Heat oil and brown chicken in it for 10 minutes.
2Add paprika, cilantro, onion and garlic.
3Saute until onion is clear.
4Stir in water, wine, tomatoes, bouillon cube, and seasonings; combine thoroughly.
5Stir in celery, almonds and rice.
6Cover and simmer 20 minutes; add peas and simmer another 10-20 minutes or until rice is ready
