Old-fashioned potato salad

Ingredients:
9 cupCubed unpeeled round red
Potato (about 3 lbs.)
1/2 cupDiced onion
1/2 cupDiced celery
1/4 cupSweet or dill pickle relish
3 Hard-cooked eggs (this can

1 Clove garlic, minced
3/4 cupFat-free sour cream
1/3 cupFat-free mayonnaise
2 tbspChopped fresh parsley
1 tspDry mustard (I used a little

3/4 tspSalt
1/4 tspPepper
Procedures:
1Place potato in a large pot, cover with water, and bring to boil.
2Cook about 8 minutes or until tender.
3Drain; place in bowl with next 4 ingredients; toss gently.
4Combine sour cream and next 5 ingredients; stir well.
5Poer over potato mixture; toss to coat.
6Cover and chill.
7Yield 9 servings.
