Ingredients:

| | Fresh nectarines, sliced | | 1
| cup | Plain low-fat yogurt | | 1
| tsp | Honey, or sugar | | 2
| drop | Almond extract, to taste | | 1
| pack | Unflavored gelatin | | 2
| tbsp | Cold water |

Procedures:
| 1 | Puree nectarines, yogurt, honey and almond extract in blender. | | 2 | Sprinkle gelatin over water in small saucepan. | | 3 | Let stand 1 minute to soften. | | 4 | Stir over low heat until dissolved. | | 5 | Add to nectarine mixture in blender. | | 6 | Blend 10 seconds. | | 7 | Chill until mixture begins to thicken. | | 8 | Spoon into stemmed glasses and chill until set. | | 9 | Garnish with additional nectarine slices and mint sprigs, if desired. | | 10 | Calories: 79 fat: 1 g sodium: 42 mg cholesterol: 3 mg |
