Ingredients:

2 Fresh nectarines, sliced
1 cupPlain low-fat yogurt
1 tspHoney, or sugar
2 dropAlmond extract, to taste
1 packUnflavored gelatin
2 tbspCold water
Procedures:
1Puree nectarines, yogurt, honey and almond extract in blender.
2Sprinkle gelatin over water in small saucepan.
3Let stand 1 minute to soften.
4Stir over low heat until dissolved.
5Add to nectarine mixture in blender.
6Blend 10 seconds.
7Chill until mixture begins to thicken.
8Spoon into stemmed glasses and chill until set.
9Garnish with additional nectarine slices and mint sprigs, if desired.
