Maple rum rice creme with chocolate sauce

Ingredients:
MAPLE RICE CREME
1 cupShort grain rice
2 1/2 cupWater
2 cupSoy milk or rice milk
1/2 cupMaple syrup
1 tspVanilla
2 tbspDark rum
CHOCOLATE SAUCE
1/2 cupDutch processed or regular
-- cocoa
1 cupWater
1/2 cupHoney (up to ?c)
1 tspVanilla
Procedures:
1Creme: in a large pot, cook rice with water, soy or rice milk & maple syrup, covered, for about 1 ?hours or until the rice is fairly mushy & most of the liquid has been absorbed.
2Puree cooked mixture with vanilla & rum till absolutely smooth.
3Transfer to a bowl, cover tightly & chill for several hours.
4Chocolate sauce: combine all ingredients in a heavy pot & mix well with a whisk.
5Bring to a boil, reduce heat, simmering gently for 15 to 20 minutes, stirring often, until the sauce has thickened & reduced to 1 cup.
6Allow to cool completely.
7Serve with the creme.
