Ingredients:
1 tbspCorn oil
1/2 cupBrown sugar
2 Egg whites
2/3 cupSkim milk
2/3 cupUnsweetened apple sauce
2 tspCinnamon
1/4 cupChopped walnuts
2/3 cupUnbleached flour
3/4 cupWheat bran
1 tspBaking soda
1 tspBaking powder
1/2 tspSalt
3/4 cupOld-fashioned oats
Procedures:
1Preheat oven to 350*.
2Lightly coat muffin pans with non-stick cooking spray.
3Cream oil and sugar together until smooth.
4Add the egg whites, applesauce, and skim milk, mix well.
5In a large bowl, combine flour, wheat bran, baking powder, baking soda, salt, cinnamon, oats, and walnuts.
6Pour the creamed mixture into the dry ingredients, and stir until smooth.
7Spoon into the prepared muffin pan.
8Bake for 22 to 25 minutes or until the muffins are slightly firm to touch.
