Armenian eggplant casserole

Ingredients:
1 ea Eggplant, lg
1 ea Green pepper, diced
?ea Clove garlic, finely minced
1 ea Onion, med, sliced
1 xSour cream (optional sauce)
4 ea Tomatoes
1/4 cupOlive oil
1 xPepper, freshly ground
1 1/2 tbspSalt
Procedures:
1Pare and dice eggplant.
2Heat oil in skillet, add onion, green pepper, and eggplant.
3Stir over low heat until eggplant is soft.
4Add tomatoes(may substitute canned italian solid pear shape, drained), salt, and pepper.
5Simmer a few minutes.
6At this point you can add basil, chives, parsley, tarragon or oregano to taste.
7Turn into casserole dish and bake at 325 °F for 40 minutes.
8Casserole may be served hot or cold, with sour cream
