Ingredients:
2 tspOil, vegetable
1/2 cupPepper, diced, red bell
1/2 cupOnion, diced
3/4 lbsPeas, black-eyed, rinsed
1 eachDrained, canned
3 ozBacon, canadian-style
1 eachCooked, crumbled
1/4 tspSalt
1/8 tspPepper
3 eachHot sauce, (drops)
4 ozRice, quick cooking
Procedures:
1In 2-qt nonstick saucepan, heat oil, add bell pepper and onion and cook over medium-high heat, stirring occasionally, until softened, 3 to 4 minutes.
2Add 1 cup water, the peas, bacon, salt, pepper, and hot sauce; stir to combine and bring to a boil.
3Add rice and stir to combine; cover and remove from heat.
4Let stand until liquid is absorbed, about 5 minutes.
5Fluff with fork before serving.
