Ingredients:
1 tbspHoney
1 1/2 tspDijon-style mustard
1 1/2 tspLemon juice
1/4 tspPoppy seeds
1/8 tspPepper
1 Chicken breast, whole
-medium, skinned, and halved
-lengthwise
Procedures:
1Combine honey, mustard, lemon juice, poppy seeds, and pepper in a small bowl.
2Stir together well.
3Rinse chicken; pat dry.
4Place chicken, bone side up, on the unheated rack of a broiler pan.
5Broil 4 to 5 inches from heat for 15 minutes.
6Turn.
7Continue broiling for 10 minutes.
8Brush with honey-mustard mixture.
9Broil about 5 minutes more or till chicken is tender and no longer pink.
10If desired, garnish with very thin strips of citrus peel.
