Ingredients:
2 lbsFresh or frozen halibut
-thawed
3/4 cupThinly sliced onion
1 can4 oz. sliced mushrooms
-drained, or 1 c fresh slice
-mushrooms
3/4 cupChopped fresh or canned
-tomatoes
1/4 cupChopped green pepper
3 tbspFinely chopped pimento
1/2 cupDry white wine
2 tbspWhite vinegar
1 tspSalt
1/8 tspFresh ground pepper
2 tbspLight margarine
1/4 cupMinced parsley
Lemon wedges to garnish
Procedures:
1Preheat oven to 350°F.
2Prepare large baking dish with nonstick spray.
3Cut fish into 6 even servings.
4Arrange onion in bottom of baking pan.
5Place fish ontop of onion.
6Combine the remaining ingredients except margarine and lemon wedges.
7Spread ontop of fish.
8Dot with margarine.
9Bake 25 - 30 minutes or until fish flakes easily with fork.
10Serve with lemon wedges.
111 serving = 4 oz cooked fish.
