Ingredients:
6 Chk breast, boned & skinned
8 cupRomaine lettuce, shredded
1 bunchGreen onion, white part
-chopped
1/2 cupRed onion, diced
1/2 cupCillantro, snipped
1/2 cupRice wine vinegar
1/4 cupExtra virgin olive oil
2 1/2 tbspSoy sauce
1/2 tbspCrushed red pepper flakes
Procedures:
1200 calories.
2Preheat broiler and brush rack lightly with oil.
3Place chicken breasts on rack.
4Broil 3 inches from heat source for 6-7 minutes or until cooked through, turning breasts over after 4 minutes.
5Meanwhile, combine lettuce, green onion, red onion and cilantro in large bowl; toss to mix well.
6To make dressing combine vinegar, olive oil, soy sauce and crushed red pepper and mix thoroghly.
7To serve, place greens on plates.
8Slice chicken and arrange on greens.
9Drizzled each serving with dressing
